The core difference
Both earn Chase Ultimate Rewards and transfer to the same partners (including the Hyatt sweet spot), so the points are identical in value. The split is fees and perks: the Sapphire Preferred has a modest annual fee, while the Sapphire Reserve costs far more but adds lounge access, a larger travel credit, and higher earn rates.
Who each suits
The Preferred is the better value for most people: lower fee, strong dining and travel earning, and full transfer access make it the default mid-tier card. The Reserve makes sense if you travel enough to use its lounge access and credits, which can offset the higher fee, and you want the elevated earn rates.
How to decide
Add up the Reserve credits and lounge value you would actually use; if that plus the higher earn rates beats the fee difference for how you travel, take the Reserve, otherwise the Preferred wins.
